Hey everyone! My inlaws are in town and we've been doing a LOT of cooking!! On Sunday, I used three of my grandmother's recipes, and then the other day, my mother in law made red beans and rice and I got the recipe from her today! All of these are ridiculously cheap and SOO easy. This coming from the girl who would so much rather go down to McDs than set foot in a kitchen.
Red Beans and Rice
3 cans red beans/red kidney beans
1 lb hamburger meat
1 lb smoked sausage
1 jalapeno pepper, cut up however you like it
1 onion, chopped
A sprinkling of crushed red pepper
A pinch of flour
Brown the hamburger meat, saving the juice. Mix the rest of the ingredients and simmer in a large pot for 20 minutes. Add flour to thicken the sauce. Serve over rice.
This makes a LOT, so you can freeze it as well. And it's even better leftover! YUM.
Broccoli Casserole
2 16 oz bags of frozen broccoli (crowns or pieces)
1 can cream of chicken soup
1 can cream of mushroom soup
6 oz Hellman's mayonnaise (grandmother swears it's the best for this recipe)
4 oz sour cream
8oz shredded cheddar cheese, divided in half -- sharp preferred, but I used mild
1 cup cooked rice (grandmother swears Uncle Ben's is the best because it's hard to overcook it)
1 tbsp lemon juice, optional
Bring broccoli just to a boil. Romove from heat and drain. Mix all ingredients, adding broccoli last and using 1/2 the cheese. Pour into a 9x13 baking dish. Sprinkle with remaining cheese and bake at 350 for 30 minutes.
*I had to work the day that we were going to eat this, so I mixed everything up in a bowl, covered it with tinfoil and stuck it in the fridge with instructions for my husband. It was still yummy! And this is one of my absolute favorite dishes to eat leftover.
Peanut Butter Pie (OMG THIS IS SO YUMMY)
8oz cream cheese - softened
1/3 cup CRUNCHY peanut butter
1 cup of sugar (add slowly)
1/2 cup of cold milk
12 oz Cool Whip - fold in
Mix ingredients in order given. Pour into 2 graham cracker (or chocolate!) crusts and freeze.
Egg Bread (or cornbread...this is actually the first half of her recipe for cornbread dressing -- when I made it, I pulled it out of the oven and went "HOLY CRAP I MADE CORN BREAD!")
Dry ingredients-
1 1/2 cups corn meal
1/2 cup all-purpose flour
1/2 tsp baking soda
2 tsp baking powder
Wet ingredients-
4 tbsp vegetable oil
1 1/2 cups buttermilk
2 eggs, beaten
1 tsp salt
Sift dry ingredients into a bowl, and in another bowl, combine the wet ingredients. Then combine the two. Generously grease a 9x9 pant and put in a 400 degree oven for 2-3 minutes. Very carefully remove pan from oven and pour cornbread mixture into it. Return to oven and bake for 20-25 minutes or until golden brown.
