Sooo confused.

I finally managed to snag a legitimate at home job after two years of trying.
Turns out this one's going to pay better than I thought. Now, I have been all over the irs and h and r block websites and eyeballed links on google til my brain is swimming but..

I'm disabled, and up until now, have been considered a dependant. This year, I won't be. I am a full time college student, if that makes a difference, but am now self employed. I get that I pay out about 15% federal, but what about state and how do I go about finding that information for Missouri?
Also, I am planning on filing quarterly, just so I am not paying out a large amount all at once- but also, I bought a computer for this, will probably buy tax software and other office items and I am curious about itemization.
On the www.wahm.com board, they talk about Turbo Tax business and its ease of use for this, and I am wondering about that, too? anyone have experience?
We own our own home and have a one year old, and like I said, he's been claiming both of us and now I am not even remotely sure how we should do things. We're not married, and the house is in his name. He'll probably be making more than me, this year, and...I don't know what other information someone who could help would need.
So, in order to file quarterly, I just fill out that form at the beginning of the quarter and send them a check? I am not at all sure how any of this works.
