Ok, so I apologize ahead of time if I don't give enough info. Here's my situation: I'm a vegetarian, and also a picky eater. I do eat things like cheese and pasta and whatnot, and though I'm usually in the states where it's not a concern, right now I'm spending January in Kiev, Ukraine, where things are seasonal. So for right now I seem to be consisting on bread and cheese products. My Mom tries to cook veggie stuff, but doesn't really have a wide-variety of recipes because she eats meat and so most of her stuff includes it. I have recipes, but almost all of them require things I can't get - like canned chickpeas, artichoke, etc. Obviously, we've got veggies that they sell here - cabbage, potatoes, carrots, onions, garlic and cauliflower being in abundance. We also can get tomatoes, lettuce, peppers and even cucumbers and fruits like bananas and apples (though all of these are expensive, but if only a little-moderate amount is needed we could buy). Oh, they also have beets but I HATE beets. I still need to look and see if I can't find some kidney beans or whatnot (it's been more than three years since I was here so I don't know what we can get nowadays).
So, given all this info, can anyone suggest any recipes, quick meals, etc that I could make with the ingriedents I have? Ideally I want to try and get all the nutrients I need (still trying to find a protein source since they dont have tofu here), but I'll settle for anything (heh I need variety, so far it's just pasta or stuffed cabbage!). Oh, we've got a million and one spices, if that helps.
