probably bad for you snack - fried cornballs

I tend to make these for potlucks or if I have almost all the ingredients around the house already, but if you had to start with nothing it would probably cost about $15 to make 24

1 can sweetcorn
1 egg
1 clove minced garlic
1 green union, finely chopped
2 tbs chili sauce or tabasco sauce to taste
salt and pepper or taste
2 cups cornmeal
oil for frying

drain and rinse corn. mix everything except cornmeal and oil in a large bowl. heat oil in a wok or fryer preferably, but other pots and pans will work as long as the oil is deep enough to submerge the balls. while the oil is heating, add cornmeal 1/2 cup at a time to the mixture, until you can roll it easily in your hand (you can also add more cornmeal here to make it feed more people with less corn). roll 6 balls at a time and drop into hot oil. fry for 1-2 minutes, or until floating and golden brown. transfer balls to paper towel to absorb extra oil.

these are best hot from the oil, but they microwave pretty well too if you need to prepare them early. I also serve mine with a little chili sauce or salsa to dip them in for people who like them spicy.
