Apple Banana Carrot Bread
Ingredients:
2 c flour
1 1/2 ts baking powder
1/2 ts salt
1/2 c canola oil (or your choice of fat)
1/2 c brown sugar
2 bananas, mashed
1 apple, grated
1 carrot, grated
1/4 c water
1/2 c chopped walnuts (optional)
1/2 c golden raisins (optional)
Preheat oven to 350F. In a large bowl, mix flour, baking powder, and salt.
In a separate bowl, mix oil with brown sugar
(LAZY METHOD: ...i tend to do this because my brown sugar likes to take the
form of little hard unmixable pebbles. also, i am lazy... throw sugar and
oil into a food processor and mix until blended. Add in carrot and apple
in chunks and chop until they are in small shreds. Add banana and water and
chop briefly.)
Add oil mixture, bananas, apple, carrot, and water to the flour mixture
(or wet mixture to dry mixture) and stir until blended. Fold in walnuts and
raisins if desired. Transfer into greased pan and bake until a toothpick
stuck into the middle comes out clean and the top is golden brown. Loaf pan:
60-65 min, 9" round: 30-35 min, mini loaves: 25-30 min
Note: I haven't quite perfected this recipe yet. Depending on the quantity/quality of your fruits/veggies and the amount of water you slosh in, this can be dense yet fluffy, or just dense. It's always pretty moist though. The food processor makes this a breeze. And it's vegan! :)
