First of all, I've discovered a number of things. A week in July, there were no messages from any Tamers in the Digital World due to disruptions caused by a Gizmon invasion. Thus, it's obvious that LOT must have snuck in during that timeframe.
Second of all, going by the assumptions that Belldandy saw a Strabimon before the Matadormon means one of three things: LOT's partner is a Strabimon and the Matadormon is it's natural evolution; LOT's partner is a Strabimon, but its influence caused it to Dark Evolve instead; or the Strabimon is a decoy FOR the Matadormon, since a Tamer can't influence multiple Digimon's evolution. Giving what LOT WAS, I'm going with the third option, though with the first or second, only one Tamer within the Dragon and the Inn has a Strabimon, RJ, the pizza parlor owner. I highly doubt that since he's also a Power Ranger and Rangers go from evil to good, not the other way around.
Lastly, if a future confrontation with LOT is inevitable (and I am sure it is), the use of physical projectiles might be advised against, as our opponent CAN stop it... that, and it seems to be able to read our minds as well...

A lot of tamers appear every week. Why would LOT need to sneak in?
The decoy is very possible. We know that LOT has five other Digimon for quite some time. They were babies when she got them, but they may have evolved to child by now. And I'm almost positive they were nearby during the attack.
I think that they might have a form of empathy. Ran-neechan said that when she confronted LOT, it felt like her emotions were getting stronger than they should have.

Thus, with no way to figure out whom the Child is, we're left with speculations. Perhaps we could figure out who the Child is by figuring out who evolves naturally to a Matadormon... but, that could take some time.
Empathy... that might also explain why both Deadpool and Venom seemed more determined to pummel LOT with little to no care of Jinx's safety.

And there can be variations in evolution, depending on certain aspects as well. There are common strings, but they can change.

That's true in that aspect. Who knows where it may lead, but it wouldn't hurt to investigate
That is a possibility. Of course, also giving the nature of our foe, everything we've gathered might just be nothing BUT lies with the exception of what we've seen first hand.
