Your Chili Secrets: Give them to me!

So, in re the previous post: Making Chili
I've only made chili once before. It was really great. Fantastic. Completely non-duplicable.
I used an amalgamation of two recipes from cookbooks belonging to alymid. I don't recall the recipes, or which books they were from. That was at least 10 years ago.

This recipe I'm using today is...not going to be great. It's not going to be bad, mind. Just not great. For one thing, there are no fresh hot peppers in it at all.

I'd like to have a good chili recipe. I'd like to develop my own good chili recipe.

What do you put in your insanely great chili?

(Actually, if you're going to call chili "insanely great," it better have apples in it I think.)
