I have been cooking (with varying degrees of success) and trying to eat locally (with - really, really varying degrees of success) since 2001, and in all that time I have never figured out vegetable broth.
I've seen recipes, mind, but it all seems so complicated and hard to store and kind of expensive, what with all those vegetables you just strain out and compost. So mostly I've just skipped it and used salty water, but lately I've been wanting to try some French vegetarian recipes and decent broth seems kind of essential.
So, Pollanesquers. What do you start your soup with? How do you store it? Is this whole broth thing easier than it looks? Convince a soup-making skeptic, because I'd like to do it right.
