College student cooking?

May 30, 2010 19:27

I'm a college student living in a dorm for the summer, and while I have a meal plan, it only covers ten meals per week, so I'm going to have to fend for myself for at least a few meals on a regular basis. Unfortunately, I don't have access to a kitchen, just a microwave and a mini fridge. I'm also cooking for just one person, which can make things challenging. Since I don't want to spend the next month or so living on pizza, I was wondering if anyone had recipes or suggestions for microwave or no cook meals. I only have access to your basic, run of the mill grocery store, so odd ingredients or particularly hard to find seasonal vegetables might be out, but I'm pretty flexible. I'm looking to eat healthily, but since my options are so limited, recipes with stuff like out-of-season vegetables or things like rice/pasta or canned items (since I know different people feel differently about them) are totally okay with me. I have somewhat limited storage space for things that need to be refrigerated, and less expensive is probably better, but I'm open to pretty much anything. Thanks in advance!

ETA: Alas, I am not allowed to have an electric frying pan - although I do agree that one would be very useful! I guess they're concerned about it being a fire hazard.
