I'm trying to plan a menu, and I could use some input. What do you think would complement a gruyere souffle? I'm considering marinated tomatoes and homemade french bread, but I 'd like to hear what others think . . .

Excellent advice, all. I was considering arugula myself. I think I'll marinate the tomatoes in the vinaigrette and line an edge of the plates with the tomatoes, layering the arugula on top.
So next question: Wine. These are ladies who do not drink wine frequently, so I'll want an easy drink. While a sparkling might be the most accessible choice, I don't know if it would complement the menu as well as a still wine. Perhaps something w/pear undertones? Advice?
