Question: preserving strawberries

It's strawberry season in my neck of the woods, and I'm eager to make the most of the local bounty and go up to the local pick-your-own place to stock up. Unfortunately, I haven't yet hit upon a good way to store strawberries (or use them somehow) for the off-months. Last year I made puree with the strawberries I didn't use, thinking strawberry ice cream would be an unexpected treat in winter. What I didn't count on was the fact that in winter, ice cream is not that tempting! I still haven't used the puree.

So what are your best uses for strawberries, to stretch out the bounty throughout the year? I'm trying to avoid intensely sugary foods, so the obvious use - jam - wouldn't be that productive for me. Any tips?
