On the apple question, I believe that is the result of Christians fucking with the story. Jews (as it was their story first) are divided on the question of what the fruit of knowledge was. Some say it was a unique fruit we have never seen since, some say it was an apple, some, oddly enough, say it was actually wheat with all the implicit associations with agriculture that go with that.
I was wondering about his politics too. It could go either way, it seems to me. He could be saying that it is about time we revisited the old story and its standard exclusionary interpretation, or he could be mocking the change in the way that people say that "It's Adam and Eve, not Adam and Steve."
Best I can figure is, the "Adam and Eve" dichotomy being a conventional way of expressing the fundamental and ancient expression of gender roles, Caitlyn's surprise entrance onto the scene, as something that doesn't fit neatly within those roles, is implied to be unnatural, disordered, and bizarre
