You saw the Grass-type team, now let me try my hand at a Fire-type squadron. A little more limited in what it can do, but Fire's still a boss type to work with. Once again, haven't raised these Pokés yet, but it's how I'm going to:

I still don't get how EVs work well. I feel super dumb.

Basically, they're invisible stat building points that come from beating certain Pokés. For every four EVs you earn in a certain stat area, you get 1 extra point in that stat at level 100. The most total EVs you can get is 510, and the most you can get in one stat is 255, but it always rounds the stat points down, so trainers only get 252 to max out a certain stat.
An example is if you wanted to give your Alakazam a boost in Special Attack. You'd take it to the Old Chateau in D/P or Pokémon Tower in FR/LG and whomp on Gastlies and Haunters. They each yield EVs in SpAtk. Gastly yields one EV in SpAtk, and Haunter 2. Does that help any?

And it doesn't have to be the same type in a row or something? I thought that's what i read, but I probably misunderstood it. Like woah.

The Power Items, Macho Brace, and Pokerus can speed up the EV process. You'll need to be responsible for tracking your Pokemon's EVs.
