I am NO LONGER CUT-TAGGING DEATHLY HALLOWS SPOILERS, boys and girls.
Rec me good post-DH fic, guys!
Things I especially like: crazy parallels, rarepairs, good writing, Harry, Dumbledore, Riddle, politics and reconstruction, warfic, dealing-with-post-war fic, post-battle/pre-epilogue, many things!
Things I'm not keen on reading: next generation fic, AS/S, Epiloguefic, fluff, Harry/Ginny that isn't fucked up cause you know it is, right guys?, everybody-comes-back-to-life-fic
Summer Holidays by
penknife (Hermione, gen.) is easily the best proper fic I've read post-Deathly Hallows. It deals with that immediately post-final battle period that needs so much more space that JKR gave it. The tone really captured the strange, disconnected, faded-out feeling of the morning-after, as it were. Definitely read it, it's worth your time.
Routines by
inell (Augusta Longbottom, gen.) is set during DH, a short, lovely little piece about the Longbottom family and wartime sacrifices.

trickofthedark (Dumbledore, gen.)- okay, so I lied. This one is slightly fluffy and has a next generation character. But it's a short illustrated fic with a children's story/fairytale feel to it about Dumbledore and the screaming baby at King's Cross.
Percy&ghosts ficlet by
rhoddlet OK, so nobody needs to be told how brilliant Rhod is. Her writing breaks my heart, so go read her ficlet and entice her back into the arms of that old temptress, HP fandom, like now.
Hallowing Lions by
wired_lizard Arkady's always written hot dumbledore fic, but this this one is basically albus+gellert+magical theory=very hot porn. I'm not a huge fan of smut, but er, I so would be if it was all like this. She is also currently involved in
Grindledore for Goats blogathon for charity, which contains lots of really well-written and fun correspondence between Albus and Gellert so go read and support.

And while you're there, do have a look at the comments on Rhod's Deathly Hallows discussion post for some crazy-ass
Dumbledore/Tom/Grindelwald/Harry discussion.

And the obligatory self-pimp: I wrote my first Harry Potter fic in ages a couple days ago, and it's an overly verbose written-while-processing affair-
The Taste for Nothingness (Harry, gen.). After the final battle, Harry lives as a Muggle for a year, give or take a few weeks.
