Instead of just spewing words to propel the story forward, the actors have time to have the subtle eye rolls, they have time to pause and reflect, in a manner that a two hour "movie-theater movie" does not have the luxury to do.
Pride and Prejudice (the book) is full of so much wit and fun, especially at the hands of Lizzy and her dad. It is a treat to see onscreen how valued she is by him, not just because they chat about it, but because you can see them be cliquey-bitchy and basically live to entertain eachother, at the expense of the silly people they are surrounded by.
Now, the Colin factor-
For me, the wet shirt has little to do with his appeal. Because Lizzy is such an engaging character, I appreciate watching Darcy's gazes turn into hard, brooding stares as he repeatedly tries to reach out to her (complimenting "extensive reading", asking her to dance and patiently waiting as she struggles unsuccessfully to refuse him) and her being absolutely oblivious to his motives.
