I've documented for years the various baking mishaps I've had, due to my tendency to ad lib things. Usually this turns out... oddly. After way too long I have finally had a brilliant success. Here's the recipe (for many servings):
Unsweetened apple sauce - 8 oz
3/4 C oil (I like sunflower + canola)
3/4 C brown sugar
3/4 C white sugar
2 Tbsp corn starch
1 tsp vanilla

1 3/4 C white generic flour
3/4 C whole wheat pastry flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 C chocolate chips
1 C chopped walnuts
Optional: Tbsp of raw coca powder to help cut the sugars. I like to use 6 heaping Tbsp but I'm pretty crazy about chocolate.

Cream the first section of ingredients.
Stir the second section of ingredients in with the first.
Bake! Ours come out best in V's panasonic mini-oven thing. But the normal baking directions are to spoon onto an ungreased sheet and bake at 350F for 15 minutes - but this may be somewhat oven dependent.
