I've started growing microgreens.  They're really not much different, except that you eat them while they're still small.  They take different techniques, for instance, you can crowd them in the container because it won't matter - they're not expected to get big.
Behold, a bunch I put together, including red winter kale, swiss chard, and baby spinach:



Next are Burpee microgreens, which include beet and kohlrabi:



The last picture is of High Mowing mild mustard blend plants.
