I had an AWESOME stuffed, fried avocado at Don Jose's a while ago and decided to look for a recipe and either find out what the healthiest oil is for deep frying, or just baking it instead.
I found one recipe that's the closest to how I remember that meal was, and the recipe didn't seem hard at all.
But then I noticed that the poster thoughtfully put a
nutrition guide on the bottom left-hand side.
Oh. Dear. God. One serving is an entire day's worth of calories, fats, and two, three, FOUR days worth of sodium!!!!!!!!!! 461%
First response: WHAA?? Ok...definitely looking up how to bake an avocado...
Second response: How is this even possible considering the ingredients? I mean, at a glance they don't seem like they create that huge of a portion. I guess it's just the final frying part that does it.
I just now found a
better alternative. Scoop out the avocado flesh, basically make guacamole with shrimp, queso, etc mixed in, spoon it back into the avocado skin bowls, and then bake.
I still really want enchiladas though............
I really wish Don Jose's and/or Chuy's would come out with cookbooks.
