To all my cooking geeks and recipe fans out there - HELP!!!
My mother is currently on one of the world's strictest diets, and it looks like it's not going to let up anytime soon. Understandably, Mum is quite bummed about this situation, especially because she's having a really hard time finding foods that she can eat (and she's having to give up a lot of the food she loves).
My plan is to create the Mummy Tummy Cookbook, a binder full of gastro-friendly recipes that she can follow without feeling sick afterward. This isn't easy, though - a lot of the foods we're used to, she can't eat. Hence the challenge, and why I need help with this.
Here's the no-no list:
- NO dairy
- NO heavy fats (butter, shortening, animal fats, heavy oils)
- NO raw vegetables - they cause gas build-up
- NO tomatoes
- NO citrus fruits
- NO heavy grains
- NO nuts or beans
- NO fried, spicy, or heavily salted foods
- NO red meat
- NO eggs (she's not allowed to eat those, anyway!)
- NO vinegar, wine, or alcohol
- NO coffee, soda, or chocolate
The good list:
- steamed vegetables and fruits
- light broth-based soups
- lean chicken or fish
- baked or roasted vegetables, poultry, or fish
- tofu (if I can get her to eat it...)
- sugar is OK, but only in small amounts
- olive oil in very tiny amounts
- salt and pepper is OK, but again - tiny amounts.

I'm hoping to present my mother with the recipe book when I am home next weekend, so I will need recipes as soon as possible - by Monday or Tuesday would be absolutely fantastic. And this is a surprise for Mum, so no blabbing (and unfortunately, no Facebook discussions - yes, she does keep up with you on Facebook!) I'm planning on doing some recipe testing this weekend and seeing what I can come up with to add to the book - I'm thinking a lot of my dishes will be steamed veggies, baked poultry, etc.
And this goes without saying, but I'll say it anyway - you will be credited for your recipe! I'd actually like to have a little picture of the person who submitted the recipe on the page, so that she knows the love is coming from more than just me. And trust me - she could really use the love right now. (Pictures of the food would be great too - I'd like this to be as colourful and user-friendly as possible.)
