Live Journal was all blocked at work and junk, but seems to be functioning now (they do random switching of what's blocked and what's not). Maybe I shall actually post. Though I do have my blogspot now, too. And Facebook. Silly, silly Facebook.
Planning Christmas dinner for your future inlaws in your new house is kind of stressful. I'm making roast beef, and working out the rest of the details. My future brother-in-law's girlfriend is vegetarian, so I want to make sure to have enough options for her, but I feel like I'm making far too many dishes for 8 people.
Roast Beef
Glazed carrots
Roasted butternut squash
Green beans (just steamed, not a casserole)
Cheesy potatoes or mashed potatoes or both
Biscuits
Pear and pecan salad
Does this sound good? Should I be making sweet potatoes instead of squash maybe? I'm also concerned because our table only seats 6, but there will potentially be 8 of us, but that's the way it goes. Maybe I should make the roast in the crock pot, so it falls apart easier, so if people end up not sitting at the table it will be easier to eat?
