Openings, grand re-opening, soft or otherwise tend, for restaurants, to kinda suck has been my experience. The staff is new & easily overwhelmed, the kitchen is still trying to figure out how to work with each other, there's the pressure of !opening!, etc, etc. Every time I go back a couple weeks/months later, everything is running much more smoothly, the food is better put together, etc. That said: Airstream + bacon jam + tasty food? Maybe it's a tad gimmicky, but what's wrong with marketing oneself in such a way as to draw attention and pull in business? As long as they have good food, then I can't fault them for wanting to get some visibility.
