I always worry, when my parents leave me home alone, how I'm going to eat. Usually I hope and pray that someone is living at home with me and can cook for me once in a while before I get back from work. (late late late!) But apparently that's inconsiderate.
This time, however, nobody is around to make meals for me and I'm making them ALL myself. Which means to avoid stress and starvation, I'm doing them ahead of time.
Today's feat of ingenuity involves pasta sauce and roasted vegetables. Two dinners in one!
First off, Mum always likes to leave me with a fridge full of either limp vegetables or weird vegetables. (as in leeks and okra. or something.) Luckily the vegetables are limp and generic. I mean, luckily they're generic. Limp is ok, though.
She also leaves me jars of vegetables in oil. Like eggplant in spices and olive oil. This time, there are only jars with oil and spice left in them.
So, I was making pasta sauce, and when it came time to add the water, I put the oils and spice in as well. I thought the oil in the jar was mainly water, but it wasn't. heh heh... So I mixed it around a bit, and when it separated, I took the baster out and sucked up the extra oil.
THEN I had this amazing idea to roast the remaining vegetables in the fridge in the oil that I had taken out of the sauce (which had some saucy bits in it, still). Zucchini, onions, nugget potatoes and carrots (out of someones garden) with pepper flakes, saucy olive oil, tomato sauce, salt and pepper, and I took a rib out of the freezer and coated it in olive oil from the can and rosemary from the garden. No garlic, because we're out.
The pasta sauce is simmering. I'm going to package it and freeze it after work. The rest is sitting in the oven ready to roast. I'll turn the oven on and roast it while I'm packaging the pasta sauce. I work just above Langley Farm Market, so I can pick up some garlic then, as well as new veggies and maybe some dinner ideas. (I got a package for butter chicken last time I was there. I'll probably do that next week.)
I know what you're thinking at this point. The pasta sauce is going to be sub-par without garlic.
