my roommate is thrilled with my new culinary experiment, my own version of the co-op's "double-green hummus," with cilantro and dill. here's my version, if you want to share in the yummy:
1 can garbanzo beans (save juice just in case so you can add some if it's not creamy enough)
1 or 2 T tahini
1 T olive oil
1 or 2 T lime juice
1 or 2 cloves garlic
2-3 T onion (i like the red ones)
1/2-1 t dill (that's dried, obviously fresh would be a bit more)
v. small handful of cilantro, can add to taste but start smaller because too much is not your friend!
salt to taste
puree away!
i pretty much estimate all the amounts and do everything by taste, and i like my hummus very garlicky and oniony, but that's the basic framework to play around in. much more fun than ordinary hummus, i find, and i've started making bigger and bigger batches (all hail the cuisinart) as graham and i get more greedy about the stuff, but the ratios basically work, so adjust at will!
