Tonight
miashell and I went out to dinner at the Delaney House in Holyoke.  It is the restaurant we went to after we got married, so we are always looking for an excuse to go and eat there.

They've started a great series called "Drink like a Pro" They pick a type of liquor or wine, teach you about it, and do a tasting menu where they pair each course with a different drink.

Tonight was cognac.

I love cognac.

We got to the Delaney House at about 6, and an adorable old man in a purple velvet smoking jacket escorted us to the room for the tasting.  Up first was a representative from Courvoisier who gave a little power point presentation about cognac, what makes a cognac, info about the region of France, info about the grapes, the distilling and the aging process, info about the different categories...

The first course was a curried butternut squash soup paired with courvoisier vs. The soup was so wonderful, rich and creamy, and the cognac was good... not the best I've had but very yummy.

The second course was a spinach salad with smoked trout and pickled ginger wasabi dressing.  It probably wasn't something that I would have picked off a menu, but I really enjoyed it... the smokey salty flavor of the trout with the sweet spicy flavor of the dressing was a nice mix. This course was paired with the courvoisier vsop. The vsop was quite a bit smoother than the vs. yum.

Then the chef for the evening came out into to the room to introduce himself and explain the courses.  He got a nice round of applause for the delicious meal.

The entree was a sirloin with a coffee rub and a blueberry sauce. It came with blue cheese mac and cheese and roasted veggies. The temperature of the entree was a little cool... but it was still delicious. This was paired with the courvoisier napoleon, which was excellent and smelled so nice.

The final course was dessert, a creme brulee (my favorite!!) paired with courvoisier xo. Delicious.

It was a wonderful night out with the wifey, we had such a good time and definitely plan to make this night a regular date. They do this once a month. We are looking forward to next month when the theme is Spanish and Portuguese red wines.
