Pasta & Guac...

I got this recipe from a girl I went to college with.  She'd make it for parties that featured wine coolers and jello shots.  It's pretty much the easiest guacamole recipe ever.

Mash up avocados.
Add chopped tomatoes.
Add chopped onion, garlic salt and lemon juice.

Super easy so good!



Then I made this for lunch for the week.  Apparently I didn't notice the recipe makes 100 gallons of the stuff.  Notice where it says 20 servings.  Yeah, I didn't.  I suppose you're to make it for a party or something but I think it works just fine as a main dish.  Also, you're not supposed to eat half the jar of artichoke hearts before putting them into the salad.  :o
