Oregano...

So one of my co-workers brought a giant bag of oregano from his garden.  He told me to bring it down to the lunch room and share with everyone.  However, no one wanted any.  So I spent the afternoon looking for recipes with fresh oregano.

Pasta with Fresh Tomato-Herb Sauce

2 cups chopped fresh tomatoes (3 medium)
2 ounces feta cheese, crumbled
1/2 cup finely chopped red onion
1/4 cup chopped fresh basil
1 tablespoon olive oil
2 large garlic cloves, pressed
1 tablespoon chopped fresh oregano
12 ounces 3/4-inch pasta shells, freshly cooked

Combine first 7 ingredients in large bowl. Immediately add freshly cooked pasta.
Toss well. Season generously with pepper and serve immediately.



I think I went heavy on the onion.  It was a strong one.  Good though.  I topped mine with extra feta.

I also made this:

Oregano Dressing

1/4 cup fresh lemon juice
3/4 cup olive oil
3 teaspoons fresh chopped oregano leaves
salt and pepper
Combine all ingredients and dress a lettuce salad.
