making ube haleya and ube sweet yeast dough

The recipe is in my yolasite so i am posting the images here because loading them at yolasite takes longer.


       


Mix the grated ube with the milk and sugar, if you want to use pure condensed milk you can omit the evaporated milk, just reduce the amount of sugar. Stir the mixture over low heat, this one is a perennial bottom sticker. Cook until it thickens. Once slightly cooled, add the butter. You can use margarine if you like.


 


Spread the filling in the dough thinly, roll and place in a greased tube pan. Cut the top for decorative effect. Proof until it doubles in size and bake at 325 F for 45 minutes. If the top is browning fast, cover with aluminum foil and finish baking.


 


Fully proofed and ready to go!! Glaze the top with eggwash for a shiny golden brown finish. Cool the loaves on top of a wire mesh and cut into slices. I will post more variations of this recipes in the future.
