here's a terrific way to bulk up on protein without the extra guilt, i make a large batch of this and form them into patties, place in plastic trays and seal for the freezer. Toss them in very thin light oil in one of those teflon coated pans, turn the heat at low to slowly fry them. No use of deep frying since you are trying to limit the use of saturated fat right?
ingredients
tofu 500 grams (pat dry in paper towels and chop)
tuna 350 grams (any fish will do, bones removed and chopped)
red onions 6 pcs medium, finely chopped
garlic 1 large head, finely chopped or minced
celery 1 cup, chopped
parsley 1/2 cup, chopped
carrots 1 cup, chopped
eggs 4 pcs
salt and pepper to taste
fine breadcrumbs, 1/2 cup
mix all ingredients together, taste the mixture by forming a small tablespoon size patty. Dredge in panko japanese breadcrumbs and fry lightly in oil. Taste and adjust the seasoning so better add small amounts of salt at the mixing stage.
form the patties and freeze. you can use the same patty mix in fried rice or pasta sauces.

the bun i used here has no top glaze, the dough itself has some eggs so i left the glaze out for a change
