First, and most importantly, I figured out the perfect mojito recipe. I will now post it here for all of you, and more importantly, so I remember it when I wake up:
3 oz mint infused simple syrup (take 1/3c brown sugar, 2/3c normal sugar, 1c water, bring to boil, add in lots of mint, steep for 30 mins)
six to ten mint leaves
muddle
a few ice cubes
3 oz lime juice
4 oz white rum
fill glass with prosecco (ends up about 50/50 prosecco and other stuff)
I also made an amazing cajun cassoulet with sausage, bacon, and thin sliced pork chop. And a mouth watering shrimp scampi that was a little spicy for some folk, and ended up being mouth-and-tear watering for them :)
