Vegan Sausage and Kimchi Rice Recipe (so I can remember how to make it later)
2-3 servings
Ingredients
- 1 cup of brown rice
- 1/2-3/4 cup of mild kimchi
- 1-2 vegan sausage, preferably Field Roast's Smoked Apple Sage
- a dash of soy sauce
- a dash of mirin (optional)
- if using leftover rice, as much as needed soup stock to keep rice from drying out (I used Imagine's Acorn Squash and Mango)
- oil
Suggestion: uses sauce pan.
Directions
- Slice sausage in thin rounds and fry in a thin layer of oil and flip to brown both sides.
- Add rice and kimchi to the pot and mix
- Add soup as needed.
- Add mirin and soy sauce to taste.
- Cover pot and let cook until rice is hot. Stir occasionally.
