Vegan Sausage and Kimchi Rice Recipe (so I can remember how to make it later)


2-3 servings
Ingredients 
  • 1 cup of brown rice
  • 1/2-3/4 cup of mild kimchi
  • 1-2 vegan sausage, preferably Field Roast's Smoked Apple Sage
  • a dash of soy sauce
  • a dash of mirin (optional)
  • if using leftover rice, as much as needed soup stock to keep rice from drying out (I used Imagine's Acorn Squash and Mango)
  • oil
Suggestion:  uses sauce pan.
Directions
  1. Slice sausage in thin rounds and fry in a thin layer of oil and flip to brown both sides.
  2. Add rice and kimchi to the pot and mix
  3. Add soup as needed.
  4. Add mirin and soy sauce to taste.
  5. Cover pot and let cook until rice is hot.  Stir occasionally.
