So, I made some surprises for dinner last night. It was great. I did doctored up popcorn for the "vegetable". Hey, it comes from corn. Air poped popcorn, lightly, and I mean lightly, buttered, then extremely lighty dusted with oregano and powdered with parmessian cheese. Then for desert we had baked apples. THey are so much easier than I ever expected. All you do is remove the core, except for the very bottom, stuff it with brown sugar really packed in there, then put a chunk of butter on top to seal it all in. Then I rubbed the outside with butter to glase it and sprinkled them with cinnamon, (makes it smell really good). Then baked them in the oven at 350 for about 20-25 minutes. They were so nice. I loved the texture, and the skin was soft. Needless to say I had a good dinner.
