Adult student piano lit

I have an adult student who is essentially a beginner. He knows theory and notes in treble cleff, but obviously doesn't have the dexterity on the keys and isn't good at reading notes in bass cleff yet. He's into '80s rock, is in a band where he plays guitar.  My question is, what do I give this guy to play that will help him learn but keep him interested? Right now I have him in an Alfred book for adults and he's learning some scales.

Obviously there's a ton of rock/pop literature that's been arranged for beginners, but there's just so much online that I'm overwhelmed.

Any suggestions? Thanks!
