Dinner lastnight was tasty... I was craving a gyro, but I've been laying off meat (aside from the 1/2 slice of turkey ham on my breakfast sammies), and I didn't have any pitas, and didn't feel like making any pitas. I had a very satisfying substitute though. :)
Vegetarian Mushroom Wraps with Tzatziki
Ingredients:
large portobello mushroom or a few thickly-sliced baby 'bellas
few slices of red onion
few slices of colorful bell peppers
roma tomato
romaine lettuce
olives (optional)
tortilla shell (or pita)
tzatziki sauce
greek seasoning
olive oil
Directions:
- Gently saute the red onion and colorful bell pepper slices in a bit of olive oil.
- Saute or grill the mushrooms in a bit of olive oil. Sprinkle on a little greek seasoning just before they finish cooking.
- Heat your tortilla (or pita) as desired.
- Fill the tortilla (or pita) with lettuce, tomatoes, olives, sauteed onion and peppers, and seasoned mushrooms.
- Top with tzatziki.

I seemed to have misplaced my Tzatziki recipe, but I remembered the basics, and I looked at a few recipes online to guide me, and just came up with another recipe. It's pretty decent but not as good as my old recipe. I need to find that one.
Tzatziki Sauce
Ingredients:
1 large cucumber
1/2 teaspoon salt
1 cup of greek yogurt
3-4 cloves of garlic, finely minced
1 1/2 teaspoon dillweed or fresh dill
2 teaspoons olive oil, optional
2 teaspoons fresh lemon juice, optional
1/2 teaspoon fresh lemon zest, optional
Directions:
- Peel the cucumber. Cut it in half lengthwise. Scoop out the seeds.
- Grate the cucumber with large grater holes.
- Sprinkle with salt. Stir. Let stand 15 minutes. Stir again. Let stand 15 minutes. Squeeze out excess liquid.
- Combine all ingredients to the cucumbers. Mix well. Chill for 1 hour. Stir.

I had no Greek Seasoning on hand. I browsed a few recipes online, and all of them seemed to vary a great deal from eachother. Like some would have 4 or 5 ingredients, and others would have like 50. Lol. But I was able to get an idea of some of the spices that were commonly used. Came up with my own little blend. I like it. I think it was delicious on the mushrooms. As for other things, I don't know yet, because I just made it lastnight. But I have almost a full spice jar of it now so I'm sure I will find random things to use it on. :P
Greek Seasoning Blend
Ingredients:
2 teaspoons garlic powder
2 teaspoons onion powder
2 teaspoons basil
2 teaspoons oregano
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon lemon pepper blend
1 teaspoon ground coriander
1 teaspoon ground cinnamon
1 teaspoon marjoram
1 teaspoon parsley
1 teaspoon rosemary
1 teaspoon dillweed
1 teaspoon paprika
1/2 teaspoon thyme
1/2 teaspoon ground nutmeg
optional:
2 tablespoons brown sugar
1/4 teaspoon ground chipotle pepper
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon turmeric
Directions:
- Blend everything together very well. Store in spice jar or similar.
Note: After everything is blended, you can grind it all together for a more powdery mix if you want. If you have coriander but it's not ground, a pepper mill works wonders on the little balls. Also, I liked the flavour of the blend already, but I wanted to try to get a more subtle sweet/spicy/smokey blend, so I added the last 5 optional ingredients. Turned out tasty too. :)
