On Pinterest lastnight, I saw a pin for pancake puffs that led to a vegan cookery site. It reminded me of what I had a few times when I was a kid. So I thought I'd try making some of my own today. I didn't feel like getting super fancy so I did just use pancake mix, but I doctored it up so I guess I kinda created my own recipe. :) I actually really enjoyed making these. They're not perfect but they were fun to make.

I made a nice variety, as you can see in the photo below:

banana
blueberry
blueberry banana
blueberry peach
cherry
cherry peach
peach
peanut butter banana

I ate a cherry one, a cherry peach one, and a peanut butter banana one. All were yummy. My favourite was the cherry one. XY fancied the peanut butter banana one best. Topped with a little butter and syrup. Good times.

DANI'S PANCAKE PUFFS

Ingredients:

1 1/2 cup pancake mix
1/4 cup brown sugar
pinch of salt
3/4 cup almond milk
1/4 cup pancake syrup

Directions:

- Preheat oven to 350F.
- Combine pancake mix, brown sugar, and salt. Mix well.
- Add the almond milk and pancake syrup. Mix well.
- Lightly butter (12) muffin pan.
- Pour batter, in equal amounts, about halfway full into the 12 muffin cups.
- Top with things that delight you. (blueberries, chocolate chips, bananas, peanut butter)
- Bake for 20 to 22 minutes.
- Remove from oven. Let stand for a minute or two.
- Top with syrup, if desired.
- Enjoy!
