slowly cooling off (thankfully.) i did a run around the farmers' market and picked up some nice things (heirloom tomatoes, mozzarella cheese, apriums, apples, greens, kohlrabi and two salad mixes, one containing edible flowers).

tonight's dinner is no-cook tomato sauce with fresh pasta.

i thought i'd posted this but apparently i hadn't? anyway.

3-4 large tomatoes - i got a bunch of heirloom ones at the market, i wanted it to look pretty. This is best with very fresh, in-season tomatoes. You can use a pint of smaller ones as well but make sure you cut them up; the tomato liquid makes a good part of the sauce. and yes, you could use canned ones too. it just tastes different.
1 lb mozzarella (fresh or not, doesn't matter. it just gives a different taste/texture to the sauce. i like fresh and they had some so i'm using that)
1/2 tsp salt
1/4 cup olive oil (as good as you can afford. and yes, olive oil specifically.)
fresh ground pepper
several stems fresh basil (this does make a difference. i haven't tried it with the dried stuff. i don't know how it would work but i don't think it would be as nice.)

Chop up the tomatoes and the mozzarella in 3/4 to one inch chunks. Tear up basil and add. Add salt, olive oil, pepper. Let it marinate on the counter for at least 2-3 hours (not in the fridge - it doesn't taste as good, and you want it room temperature when you add it to the pasta.)

Cook up some pasta. they were selling fresh lemon pepper pasta at the market, but i've made it with regular dried pasta too. It really doesn't matter.

Drain pasta and add room temperature sauce to it; toss together and serve. I'd say this makes enough for two.

kid stole and ate half a pie from the kitchen while we were asleep this morning, which confirmed that he is still allergic to at least wheat and possibly all gluten products. playing sims, doing housework, my joints hurt a lot. boring post is boring. the end.
