i recently gave nadine (she's got a livejournal account, but she won't give me her journal name) my recipe for aloo gobi - so i thought i would post another one of my favorite indian recipes.
Lemon Rice
2 1/2 cups of basmati rice
1/4 cup raw cashew pieces
2-3 T canola oil
pinch of hing (asafoetida)
2 tsp black mustard seeds
2 tsp urad dal
2 tsp channa dal (soaked in cool water 30 minutes before using)
2 chopped green serrano chiles (seeded if you want less heat)
5-10 curry leaves
1 tsp turmeric
2-3 T lemon juice
salt to taste
cook rice in usual fashion. when rice is finished, set aside to keep warm. in dry pot, add cashew pieces and place pot over medium heat. stir until cashews become slightly golden. remove cashews and set aside. in the same pot, add oil and place back on medium heat. when oil is hot - add a pinch of hing and mustard seeds. stir once and cover. when mustard seeds stop popping, uncover and add dals. cook until ural dal becomes golden (1-2 minutes). next add chiles and curry leaves. stir a few times and remove from heat. next add turmeric and stir for another 30 seconds. add rice and stir until rice is coated with spices. add salt to taste and lemon juice and stir.
