The tinkerer in wouldn't leave this simple salad alone. I had to add a few things. Just for some color and texture. I added some jullienned radish, chopped green onion and mung bean sprouts. All Thai ingredients! The results were outstanding! Here's the revised recipe:

Ingredients:
4 oz leftover steak, very thinly sliced
1/4 medium onion, very thinly sliced
3/4 cup bean sprouts
2 radishes jullienned
2 small green onions, including tops, thinly sliced
2 tbs fresh cilantro, coarsely chopped

Dressing:
2 tbs fish sauce
2 tbs fresh lime
1 ts Sriracha chili sauce
1/2 ts sugar

Combine all ingredients in a bowl, add dressing, toss well.
Let sit at room temperature for 10 - 20 minutes.

Serve over either hot or cold rice.
