Today's GF cooking list

Today..
I made Brunswick stew with rabbits
I made a while cake withe fudge icing ( all from scratch)
Also a fruit dump cake....
and finally homemade mac n cheese...

All gluten free of course..

Now we have stuff for dinner a few times this week and we have lunches...

The brunswick stew was the Colonial williamsburg recipe... only i used rabbits. about 3 lbs of meat.. boiled in about 8 cups of water.. then removed the rabbits.. let em cool... while they cooled i added veggies... and that was about 1-2 cups of okra, lima beans, corn, 2 onions, 15 oz of canned diced tomatos, salt and pepper to taste... warm that up... add the meat back in ..

I cooked it until i was done with the other stuff and ate it...

Matt and i are still working on the pot... there is about one more bowl left.. so definatly good for leftovers... and work lunches.:)

as for the cakes.. i took Bette Hagmans recipes and modified....

I started by making a significant batch of her general GF mix.. Reducing that down to a workable amount for what i needed to make(it made several cups)

From there i followed her recipe in the Gluten Free Gourmet Cooks Fast and Healthy for Cake Mix. I also reduced that one down to a size i could manage( which made me one cake and one mix for later)

I can post the exact measurements later.. i don't have em right now and i am off to bed. On top of that i don't want to insult anyones intelligence here b/c we can all read:)

That being said.. i will post the details if you don't have the books...

Just so you all know.. the Mac N cheese.... well i screwed it up somehow.. it was not edible.. hell i think the dog turned her nose up at it.. LOL

but i did make some bread... to make a comeback!!

we will see what i brew up this weekend.. if do at all... that is...

My fiance says Bette Hagman is a goddess. I have several of her books (will have to check if I have the one you referenced)... he uses them more than I do. Sad, isn't it?

I really need to find some nicely priced rabbit. That stew sounds really tasty.

Good bread is worth its weight in mac n cheese. ;)
