RECIPE

Ingredients:

* eggs, 4 separated
* sugar, 12 tablespoons
* cream cheese, 500 grams [1]
* amaretto, 3 shots
* coffee, 2 cups [2]
* Savoiardi ladyfinger biscuits, 1 large package (something like 40)
* cocoa powder or grated chocolate



Directions:

1. Place the egg yolks in an electric mixer bowl and add approximately 8 tablespoons of sugar.
2. Beat with an electric mixer until the mixture forms a good ribbon (should nearly have soft peaks).
3. Once the correct consistency is achieved, whisk in the cream cheese until smooth.
4. In a separate bowl, whisk the egg whites along with 4 tablespoons of sugar until hard peaks form. [3]
5. Fold the egg white mixture into the cream cheese mixture.
6. In a separate bowl, pour the hot coffee and amaretto.
7. One at a time, quickly dip [4] each biscuit in the coffee mixture and then place on the bottom of a 9x13 glass baking pan. Continue until you have an entire layer of biscuits on the bottom of the pan.
8. Using a spatula spread half of the cream over the biscuits. Repeat the process above to make a second layer. This should fill the pan.
9. Refrigerate 8-10 hours or overnight. Sprinkle the chocolate over the top.

[1] Should actually be mascarpone cheese, but parents refused to buy the stuff as is 60% saturated fat. XD;; Cream cheese works fine, it just... tastes like cream cheese instead of mascarpone.

[2] If I were making it again I'd only use 1 cup coffee (it really doesn't need to be that wet), but make it espresso. And maybe add a bit more alcohol.

[3] Hard peaks = until you can pile it up to look like a meringue. I did this by hand, it took several geological eons.

[4] Or lay the biscuits in the pan first and then spoon coffee over them, which may be easier to manage - they're very absorbent. XD
