Here is a a simple recipe for chicken that my mother gave me. I've cooked it twice now and it has come out well. I'll keep my directions simple and do my best to make sure you know what is what.

Tools:

Broiler Pan (A two piece set, a small tray and a ribbed piece that w/ slots that sits on top)
Brush
Mitts
Tongs
1 Tiny pot
Foil

Ingredients:
Chicken Parts (4 Leg Quarters works the best, but any cut will do)
2 Sticks of Butter
1 tspn salt
1 tspn pepper

Directions:

1. Dethaw chicken.
2. Melt butter; use the 2,1,or Low setting on your stove; too much heat will smoke it. Mix the pepper and salt in the butter.
3. Fill broiler bottom w/ 1 cup of water, this tray will fill w/ drippings so do not add much more water or you'll have a mess.
4. Spray broiler top and arrange chicken on it skin side up after basting them.
5. Broil for 15 minutes. Remember not to close the door, leave it 1 or 2 inches open, there ought to be a hinge on the oven for it.
6. Remove, baste again, flip, broil another 15.
7. Remove and flip to skin side up. Carefully cover in foil, nothing fancy just enough to keep it covered. Turn over to 350, heat for 40-45 minutes depending on chicken piece sizes and level of dethawness you started with.
8. 15-10 minutes till done start your sides if canned or frozen veggies.
9. Serve.

This is the basic recipe for a simple decent skin and moist chicken. Add your favorite herbs to the butter and apply directly for a seasoned chicken piece.
