010 Pasta with pancetta, leeks and mushrooms

300 grams dried pasta
Salt and pepper
3-4 tbsp olive oil
125 grams pancetta in slices..I used bacon.
2 medium sized leeks, cleaned and sliced.. I used spring onions
250 grams mushrooms, cleaned and sliced
2-3 tbsp sour cream
Parsley
Boil the pasta al dente according to the packet.
Heat the oil in a large frying pan. Add the pancetta and fry it golden brown. At high heat add the leeks and mushrooms and let it cook for another 6-8 minutes or until the leeks are tender. Season with salt and pepper.
Drain the pasta and add the pasta to the pancetta mixture. Stir in the sour cream and serve with chopped parsley.
