001 Brunsviger

The name of this cake cannot be translated. But it is the traditional birthday cake of Denmark I would say! and I don't know anyone who doesn't LOVE this cake. When you are a child you get this cake for your brirthday and it's shaped like a girl or a boy and decorated with candies!

This is my first succesful attempt at a brunsviger!

I forgot all about a picture the other day when I made this, cause I couldn't wait to dig in! So I borrowed this from isabella.dk.



Brunsviger - enough for 12

Dough:
1/4 Liter of milk (8 fl. oz)
50 grams of fresh yeast (1.8 oz)
100 grams of soft butter (3.5 oz)
2 tablespoons sugar
1/4 teaspoon salt
2 eggs
500 grams flour (17.5 oz)

Topping:
150 grams butter (5 oz.)
150 grams dark soft sugar (5 oz.)

Heat the milk slightly and stir out the yeast. Mix in the rest of the ingredients for the dough. Mix and knead till the dough is shiny and sticky.

Butter a cake tin (25 x 30cm (10 x 13 inches)) and in this tin, press out the dough. Leave the cake to raise for about 20 minutes, somewhere warm.

While the cake is raising, make the topping. In a small pot melt the butter and add the sugar and bring it up to a boil while you stir.

Now, grab a spoon and in the cake dough make velts and pour over the hot sugar mix.

Bake the cake for 25 mintues in a 200 c (390 f) oven.
