Monday's Harvest/Dinner
I didn't get to post this earlier...
Monday's meager harvest:
Herbs from the garden as well:
Combined with an earlier harvest + 1 store purchased orange bell pepper - the cucumber in the photo and it was more than enough for our dinner. The meager green beans were combined with an earlier harvest of green beans and cut up and added to a small pot of orzo.
We did have a cucumber after dinner, but one from last week's farmers' market. We wound up roasting the veggies and were mostly happy with the results. I'm bummed about the eggplant, it was too ripe...so there were a lot of seeds and it was a tad on the bitter side. Honestly, when I last checked on the eggplant, I thought it was about half the size of what I wound up harvesting.
