A simple meal, yet too tricky for me...

Tonight's dinner: couscous with pine nuts, teriyaki chicken and a bowl of raspberries.

Jana and I prefer dark meat (Michael prefers white) so typically, purchasing a whole chicken works out for us. But with Michael out of town, I opted for a package of drumsticks from Trader Joe's.

I cannot de-bone a chicken to save my life. Heck, and I'm only trying to de-bone some drumsticks. Guess I'll be on YouTube later tonight to figure out de-boning. Not wanting to give up on all of the meat left on the drumsticks, I'm making a stock tonight that I'll use for pancit tomorrow night.

I guess the next time I want boneless dark meat chicken, I need a trip to a butcher or Wholey's. Or perhaps invest in a pair of kevlar gloves. Ouch! (Just in case Michael is reading this, I am not admitting any cuts. No, there are no cuts in my hand. None at all. Hmm, maybe a couple.)
