The recessive part is fairly easy (at least for hair and skintone-so long as you only have 4 skintones), as is the facial features. When you load up their DNA, you'll see what features the Sim has as prominent, and they are labeled like, Ears, eyes, nose, mouth, cheekbones, cheeks, jaw, etc. Not every Sim has every feature dominant and when changing them, just remember the plural.
Hair color is by number, but it's a string of zeroes with a single number before it: 1-Black, 2-Brown, 3-Blond, 4-Red.
Skintone is the same-so long as you don't have geneticized skin. But, say, you wanted to have a character have alien skin on recessive, it's as easy as finding another alien with a matching skintone, copying their string of skintone numbers and pasting on the line of the Sim you want it on. Same would go for those geneticized skins. Otherwise it's all S1, 2, 3, or 4.
Eyes are also a string of numbers. If I wanted to give, say, Zane, light blue eyes on recessive (and in point of fact, I did), then I just pulled up someone who I knew had light blue eyes (and in that case it was Ashley Pitts), copied the string of numbers and pasted it on Zane's eye recessive.
Hope that helps a little bit. Mainly it really helps when you're rebuilding, because CAS Sims tend to have ALL of their facial features dominant and, of course, no recessives if they have a dominant hair color.
