No, not your Italian pastry with pink yellow and green stripes.
(Side note - Justin's mom makes these from scratch - I can not WAIT until Christmas Eve at his house)
But no, no - I'm talking about the Starbucks Rainbow Cookie
I was first introduced to this delectable treat at a Starbucks near
jjirish79's old office (20th and 5th).
He offered me a piece and I reluctantly complied (I had always previously assumed (through bad experiences) that all Starbucks pastries were stale and relatively tasteless - but alas, he had caught me in a moment of sugary weakness).
As I bit down, I was pleasantly surprised with minimal resistance. The soft cookie was in fact a perfect sugar cookie (not too sweet, but just sweet enough) with M&Ms that both complemented and perpetuated its perfection. I could tear through the soft delicacy with out dropping a single crumb.
I was hooked.
But I never found one of its caliber again.
Whenever I get a latte and have the slightest desire for sweetness, I give it a try.
I'm all too often disappointed with a hard cookie and a shirt full of crumbs.
Perhaps I had gotten a brand new batch?
Perhaps the baristas at 20th and 5th really take pride in providing their customers with a perfect pastry experience.
I don't know.
But I will keep trying until I experience that joy once more.
