To make the most of my last few (four, to be exact) hours of vacation, let's talk about fun things.
1 - President Obama. Will I ever not get a kick out of saying that? Sources point to NO.
2 - I made some excellent curry this weekend. Here have the recipe -
1 lb boneless chicken
2-3 tbsp olive oil (it called for sunflower, but it's just for sauteing the chicken and onion, so olive was fine)
1 onion, chopped
1 clove garlic, crushed (for those without a food processor, like me, I just put the clove in my smallest glass bowl, then used the end of my rolling pin to crush it. It worked a charm.)
1 cooking apple, chopped (so this bit technically called for 1/2 large cooking apple that was to be peeled and chopped. I grabbed a Gala from my fridge, cored and chopped it and threw it in leaving the skin on and it was quite tasty.)
1-2 red chillis
salt/freshly ground black pepper
400 ml coconut milk
2 tbsp green curry paste (I'm still working up to making my own, I get it in the jar for now *g*)
Saute chicken (in oil) until golden, then set aside
Saute onions and garlic until soft
Add apple and chillis, saute for another minute or two
Add chicken back
Season with salt and pepper
Add coconul milk and green curry paste
Bring to a boil, simmer for 15 minutes, until chicken is cooked
It was quite delicious. And I love curry for the simple fact that it gets approximately one pan and one knife dirty. You just chop and throw in the pot.
