They're all pretty even. Um - cello is the largest of the three. Violin is the screechiest when you're learning. Guitar... you can often get the most pieces to play with.

You'd probably find the violin too high pitched. A guitar has a rather wide range of octaves, though.

An octave is the interval between one musical pitch and another with half or double its frequency.

Like... when you're angry, you know how your voice goes really low sometimes? That would be a change in octave. Or when you're nervous, your voice can go really high. That would be an octave change too.
