Something you might want to consider instead of a true document safe is a medium sized gun safe.

Pro
1) They tend to be rated higher against fire than regular document safes.
2) They tend to be cheaper pound for pound then document safes
3) they are typically better able to store non document stuff that you might want to secure (jewelry, small electronics, etc.)

Downsides are that some people are weirded out by the thought of a 'gun' safe (whether or not you keep guns in it) and you typically have to get it from a gun store (which again weirds people out). The other thing is that typically you have to either rig up or buy special interiors so that you can easily store documents. Most gun safe manufacturers sell these type of things, but it is an additional step you have to take . . .

I have a fairly large one b/c I do own a couple of rifles and handguns, but the majority of the space is given over to jewelry, financial documents, insurance documents, etc. We have ours in the closet in the master bedroom and it is bolted to the wall and the floor for extra security.
