So, I ended up making a big batch of peanut butter cookies/biscuits, shaba beef puddings, chicken muffins, and there's some grated carrots in the fridge (I was gonna make a cakey loaf) that are slowly going off because I had to go back to work. Kinda. It's something I made up. I made some rice in the rice cooker with the broth of a can of chicken noodle soup (and ate the leftover noodles on their own 'cause they're good that way :)), some turmeric, and some water. While that was cooking, I set the oven to 180 (c) and microwaved 2 small chicken breasts until they were just barely cooked and ran them under cold water to cool. I shredded them up as small as I could and put them in a bowl. I microwaved some of those frozen vegetables that are diced very small, drained them, and put them in the bowl with the chicken. Then I added an egg and mixed it all together. I packed the mixture as tight as I could into a muffin tin (not actually a tin because I use the silicone type, so you might have to butter it if you're using the traditional type)and put it in the oven for about 20 minutes. Then I started checking on them every 5 minutes or so until the mixture had shrunken into the cups a bit and was browned around the circumference. They taste alright (as far as healthy stuff goes! ;)) but next time I think I will fill the muffin tin cups only half full.
